Tuesdays with Dorie: Classic Banana Cake

Hiya, my fellow Tuesdays with Dorie bakers! I'm back! I took a little break from Dorie because I was getting overwhelmed with sweets. But, I was sitting at home today, avoiding having to help clean up outside post-tree cutting & putting off lesson planning for the upcoming school year when I realized I had a few overly ripe bananas in the freezer. So, I scrounged together the rest of the ingredients for this week's recipe...Classic Banana Cake, which was chosen by Mary of The Food Librarian.

Since I don't own a bundt pan, I halved the recipe and baked it in an 8x8 square pan for about 50 minutes. I was going to top the cake with goat cheese icing and a sprinkling of chopped walnuts, but it turned out so moist and fluffy; it didn't need anything on top!

  9. Awesome, Awesome recipe! Made the cake version this weekend. I did add a cup of walnuts to the batter...which worked out well. The goat cheese icing, really was the icing on the cake ;-)
