3 pounds flank steak
juice of 3 limes
4 garlic cloves, minced
1 tablespoon salt
Sprinkle the salt over both sides of the steak & place in a shallow baking dish. Mix the lime juice & garlic and pour over the steak. Cover and let marinade for 30 minutes. Grill the steak over a hot fire for 6 minutes per side. Let rest 10 minutes, then slice against the grain as thinly as possible.

Cilantro Jalapeno Sauce
2 jalapeno peppers, roasted & peeled
1 garlic clove
1 handful cilantro, heavy stems removed
1 tablespoon fresh lime juice
1/2 teaspoon salt
1 cup sour cream
In a blender or food processor, combine everything except the sour cream. Puree until smooth. Add the sour cream and adjust seasoning if needed.

Do you remove the seeds from the jalapenos?
Yes, you can cut the peppers in half and take out the seeds. OR, if you want more heat, them them in since you're gonna blend them up anyway.
This has some of my favorite flavors, and that sauce sounds fantastic.
