Chocolate Zucchini Muffins

1 1/2 cups light brown sugar
1/4 cup (1/2 stick) butter, melted
3/4 cup vegetable oil or coconut oil
3 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
2 cups grated zucchini
1 cup chocolate chips
2 cups all-purpose flour
1 cup cocoa, sifted
1/2 tsp salt
2 tsp baking soda
1 tsp ground allspice
1 1/2 tsp cinnamon
- Pre-heat oven to 350 degrees F. Line muffin pan with muffin cups.
- In a medium bowl mix together the sugar, butter and oil. Beat in eggs, one at a time until well Incorporated. Stir in vanilla, buttermilk, zucchini and chocolate chips.
- In a separate bowl mix together all of the dry ingredients. Add the liquid ingredients and mix until well combined.
- Spoon batter into large muffin pans. Bake in the center of the oven for about 30 minutes. Cool on a wire rack. (Note: Heidi says, "Don't overcook them or you will lose all the moist goodness.")

I'm a new reader, and just stumbled across your site via the St Louis food bloggers list.
I've been hunting for good recipes that call for zucchini, since I'm swimming in summer squash from our CSA. These sound yummy, and it looks like if I make them while my husband's out of the house he may not notice the zucchini!
They were quite good...like a veggie dessert. Yum!
